The majority of the collection is made up of subject files pertaining to his wide range of interests. The largest group covers nutrition surveys of U.S. military related agencies including ICNND.
Arnold Schaefer Papers
Papers of nutrition scientist Arnold Schaefer (1917-1992) consists of seven feet of films and slides, primarily related to nutrition education and international nutrition surveys. Two feet of documents from various nutrition surveys. Shaefer made important contributions to the study of folic acid.
