Papers of nutrition scientist Arnold Schaefer (1917-1992) consists of seven feet of films and slides, primarily related to nutrition education and international nutrition surveys. Two feet of documents from various nutrition surveys. Shaefer made important contributions to the study of folic acid.
This site contains collection guides, or finding aids, to the archival collections held by Vanderbilt University Special Collections and University Archives, the History of Medicine Collection, and the Scarritt Bennett Center.
